About the Farm
Our flower farm is located in Elkton, Florida, a small agricultural town about 20 minutes west of Historic Downtown St. Augustine. Known for its rural land, Elkton has a long history of farming, from potatoes to cabbage and now, flowers! The area’s mild winters and warm summers create an ideal environment for growing a wide variety of blooms throughout the year.
Our Farm’s Roots
Elkton Flower Farms is located on a small field within the larger Scott Parker Farms, a family-owned agricultural operation with deep roots in Northeast Florida. Farming has been a way of life for the Parker family for generations, with Scott Parker and his son, Joe Parker, proudly representing the fifth and sixth generations of farmers in St. Johns County.
Scott Parker Farms is best known for its high-quality potatoes, which are shipped to Frito-Lay and turned into the potato chips enjoyed by people across the country. In addition to potatoes, the farm grows a variety of fruits and vegetables, contributing to the rich agricultural heritage of Elkton. Through hard work and dedication, they have continued to grow and adapt, keeping the farm a thriving part of the local agricultural community.
We are incredibly fortunate to have a field within this outstanding farm to grow our specialty cut flowers. Thanks to the generosity of the Parker family, Elkton Flower Farms is able to bring locally grown blooms to the community of Northeast Florida.
About the Farmer
My name is Shelby Brim, and I’ve been working in the agricultural industry for eight years. My journey started in high school when I was searching for a part-time job and came across Burke’s Sod Farm in Hastings, FL. As a farmhand, I did a little bit of everything—cutting grass, pulling weeds, feeding animals, and weighing produce trucks. I quickly fell in love with the hands-on work and the tight-knit agricultural community.
From there, I spent my summers working at Parker Produce, where I helped in the shipping and receiving office and graded potatoes at the picking table. I was always fascinated by the scale of the operation and the impact their farm had—not just on our local community, but across the country.
In 2023, I decided to start growing my own crop—flowers! At the time, I was still in college, which meant turning my dorm room into a makeshift greenhouse. (I’m sure my roommates loved that.) I set up shelves, grow lights, and went all in. That fall, I planted my first seedlings, and by early 2024, I had my first harvest. From that moment on, I was hooked. Growing flowers has become more than just farming; it’s a passion that fuels my curiosity and love for agriculture.
Outside of flowers, I’m a daughter, a twin sister, and a basset hound mom. I played Division I soccer at Jacksonville University while earning my mechanical engineering degree. Today, I work full-time as an engineer for Stellar, a design-build firm in Jacksonville, FL. Balancing engineering and flower farming keeps life exciting, and I wouldn’t have it any other way!
